From grain to gain: Crespel & Deiters to present functional wheat- based ingredients at IFT FIRST 2025

Crespel & Deiters Food USA LP, South Building – Booth S3453 | July 13–16, 2025 | McCormick Place, Chicago

Chicago, IL – At this year’s IFT FIRST event in Chicago, Crespel & Deiters will showcase its latest developments in functional wheat-based ingredients designed to support growing demand for nutritionally optimized and plant-based applications. Under the banner “From Grain to Gain”, its gym-themed booth will reflect modern, health-oriented lifestyles. On show will be cutting- edge ingredients that support the creation of “better-for-you” product innovations with optimal processing properties. Technically advanced ingredients such as wheat-based proteins, starches, texturizers, extrudates and binders enhance formulations for baked goods and pasta, plant-based snacks and confectionery, meat replacements and hybrid formulations. Developed to align with current nutritional and market trends, these ingredients support high-protein, low-carb and high-fiber formulations, while maintaining product appeal and process efficiency.

Crespel & Deiters takes an integrated approach to functional ingredient development, supporting customers not only with high-quality wheat ingredients but also application know-how. This includes guidance on ingredient interactions, manufacturing processes and easy reformulation to meet today’s consumer demands.

Protein boost

Responding to sustained consumer interest in protein-enriched foods, Crespel & Deiters will feature its Lory® Protein and Lory® Tex solutions. These ingredients can boost protein content by more than 60 per cent (dry matter). They are ideal for baked goods, snacks, pasta and various plant-based end products where improved nutritional value and functional texture are critical. The neutral taste allows manufacturers to explore and implement their own unique flavor ideas.

Treat for fitness enthusiasts: fewer calories and more fiber

Highly functional wheat ingredients such as Lory® Starch Elara support the development of optimized recipes for wholesome, active nutrition products. All reformulations, whether sweet or savory, offer ultimate indulgence with a better nutritional composition. They can increase the fiber content and support carbohydrate reduction.

Plantification: replace ingredients from animal sources

Actively replacing animal-based ingredients with plant-based ones is more than just a trend – it’s a strategic approach. Manufacturers can stay competitive in the long term with more health conscious and sustainable products that still promise prime quality and cost-efficient production. Here, wheat-based ingredients are an ideal match with multiple benefits: Texturates, binders and coatings offer uncomplicated and reliable processing. Thanks to their neutral taste and color, they can be easily integrated into multiple finished products, perfectly replicating authentic textures. The range includes solutions for plant-based meat and seafood replacement as well as hybrid products. When it comes to replacing egg or milk, Lory® Stab provides the best results for baked goods, convenience food, fillings, creams and pasta. Vegan egg replacement offers manufacturers added value by freeing them from the confines of volatile egg prices. To further enhance the visual appeal of baked applications, snacks and confectionary, Lory® Glaze delivers appealing browning and perfect adhesion of toppings.
